Made with green tomatoes that give this a sour edge, the gazpacho has pickled cucumber and cucumber gel, and the white pieces you see is creme fraiche sorbet. The summer menu at Olive is beautiful and this gazpacho as the first course completely sets the tone for the menu ahead.
