Grilled chicken, fresh tomatoes, creamy mozzarella, and fragrant basil make up these delicious chicken caprese open-face sandwiches. They are served on crispy toasted bread and drizzled with a tangy balsamic glaze.
Ingredients: 4 slices of crusty bread. 2 chicken breasts, grilled and sliced. 2 large tomatoes, sliced. 1 cup fresh basil leaves. 8 oz fresh mozzarella, sliced. 2 cloves garlic, minced. 2 tablespoons balsamic glaze. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: Warm up your broiler. Sprinkle olive oil over the bread slices and put them on a baking sheet. Toasted a little on the broil for about two minutes. Add the minced garlic to the toasted bread slices and rub it in. Add tomato slices, grilled chicken slices, and fresh mozzarella slices to the top of each piece of bread. Add pepper and salt to taste. After taking the baking sheet back out of the oven, broil it for three to four minutes, or until the cheese is melted and bubbly. Take the sandwiches out of the oven and put fresh basil leaves on top of each one. Add the balsamic glaze right before serving.
