Orange Cranberry Sugar Cookie Bars
Easy & Soft Orange Cranberry Bread Recipe

Loaf Ingredients:
2 Cups All Purpose Flour (272g)
2 Teaspoons Baking Powder (10g)
1/2 Teaspoon Baking soda (2.5g)
1/4 Teaspoon salt (1.5g)
1/2 Cup Butter (112g)
5 Tablespoons yogurt (70g)
2/3 cup sugar (125g)
2 Eggs
1 Tablespoon Orange Zest (6g)
3/4 Cup orange juice+fruit blended (180ml)
1 Cup Fresh Cranberries (100g)
Glaze:
1 Cup Powdered Sugar (120g)
2 Tablespoons Water (30ml)
Directions:
In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside. In a large mixing bowl, beat the butter, sugar, and yogurt until light and fluffy. Add the eggs and mix just until combined. Whisk in the orange zest and juice. Add the flour mixture in two parts, mixing just until combined. Fold in the cranberries.
Prepare a 9 inch loaf pan with butter and flour or with cooking spray. Spoon batter into pan and smooth out top. Bake in a preheated oven at 350F for 40-45 minutes or until an inserted toothpick comes out clean. Cool completely on a wire rack.
To prepare the glaze, mix together the powdered sugar and water. Pour glaze over the loaf and let stand until glaze is set.

1 1/2 Cups All Purpose or Whole Wheat Flour (210g)
1 Teaspoon Baking Powder (5g)
1/2 Teaspoon Baking Soda (2.5g)
1/4 Teaspoon Salt (1.5g)
3 Tablespoons Sugar (36g)
2 Eggs
1 Teaspoon Vanilla Extract (5ml)
2 Tablespoons Olive Oil or Melted Butter (30ml)
1 Teaspoon Orange Zest (2g)
1 Cup Orange Juice (240ml)
1 Cup Fresh Cranberries (100g)
Directions:
In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, and sugar. Set aside. In another bowl, whisk together the eggs, vanilla, oil, zest, and orange juice until well combined. Add the orange juice mixture to the dry ingredients and stir just until combined. Fold in the cranberries.
Heat a pan over medium-low heat, spray with cooking spray. Spoon batter into pan forming a circle (about 1/4 cup of batter). Cook until edges are dry and bubbles start to appear on the surface, then flip pancake over and continue to cook about 2 more minutes or until the pancake is fully cooked. Repeat the process with the rest of the batter. Serve warm.
