Ingredients: 2 large oranges. 3 cups almond flour. 1 cup granulated sugar. 3 large eggs. 1 teaspoon baking powder. 1/2 teaspoon vanilla extract.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. Wash the oranges thoroughly, then place them in a pot of boiling water for about 10 minutes to soften the skins. Drain and let them cool. Cut the cooled oranges into quarters, remove any seeds, and blend them into a smooth puree. In a mixing bowl, combine the almond flour, granulated sugar, and baking powder. Add the orange puree, beaten eggs, and vanilla extract to the dry ingredients. Mix until well combined. Drop spoonfuls of the cookie batter onto the prepared baking sheet, leaving some space between them. Bake in the preheated oven for 12-15 minutes, or until the cookies are set and slightly golden around the edges. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
