Ingredients: 1 and 1/2 cups all-purpose flour. 1/2 cup unsweetened cocoa powder. 1 cup granulated sugar. 1/2 cup unsalted butter, softened. 2 large eggs. 1 teaspoon vanilla extract. 1/2 cup whole milk. 1/2 cup sour cream. 1/2 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup semi-sweet chocolate chips. 12 Oreo cookies for the cupcake batter. 12 Oreo cookies for decoration. 1 cup unsalted butter, softened for buttercream. 3 cups powdered sugar for buttercream. 1/4 cup unsweetened cocoa powder for buttercream. 1/4 cup heavy cream for buttercream. 1 teaspoon vanilla extract for buttercream. 1/2 cup semi-sweet chocolate chips, melted for buttercream.
Instructions: Preheat your oven to 350F 175C and line a cupcake tin with paper liners. In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. In a separate large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract. Mix in the dry ingredients in three parts, alternating with the milk and sour cream, beginning and ending with the dry ingredients. Mix until just combined. Chop the 12 Oreo cookies for the cupcake batter and fold them into the batter along with the semi-sweet chocolate chips. Divide the batter evenly among the cupcake liners, filling each about 2/3 full. Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Allow cupcakes to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely. For the buttercream, beat the softened butter until creamy. Gradually add powdered sugar and cocoa powder, mixing until well combined. Add heavy cream and vanilla extract and continue to beat until smooth and fluffy. Melt the semi-sweet chocolate chips and fold them into the buttercream to create the chocolate flavor. Once the cupcakes are completely cooled, pipe the chocolate Oreo buttercream onto each cupcake using a piping bag and tip. Top each cupcake with a whole Oreo cookie for decoration.
