Ingredients: 1 cup butter, softened. 3/4 cup granulated sugar. 3/4 cup brown sugar, packed. 2 large eggs. 1 teaspoon vanilla extract. 2 cups all-purpose flour. 1 cup cocoa powder. 1 teaspoon baking soda. 1/2 teaspoon salt. 1 1/2 cups chocolate chips. 12 Oreo cookies. 8 oz cream cheese, softened. 1/2 cup powdered sugar. 1 teaspoon vanilla extract.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla extract. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the chocolate chips. Scoop tablespoon-sized portions of cookie dough onto the prepared baking sheet. Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft. Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. While the cookies are cooling, prepare the Oreo cheesecake frosting filling. In a mixing bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Take an Oreo cookie and spread a generous amount of the Oreo cheesecake frosting on the flat side. Place another Oreo cookie on top to create a sandwich. Repeat this process with the remaining cookies and frosting. Once the cookies are assembled, you can optionally roll the edges of the frosting in crushed Oreo crumbs for extra decoration.
