DID YOU KNOW? Peppers are ranked by their heat, or the amount of capsaicin they contain, on a scale called the Scoville Scale. Capsaicin is a chemical that causes a strong burning sensation when it comes in contact with the mucous membranes in our mouths and our body. The capsaicin concentration in peppers is then given a number on the Scoville scale and is called Scoville Heat Units. The bell pepper is the only member of the genus Capsicum that does not produce capsaicin, so they have zero Scoville Heat Units which puts them at the bottom of the Scoville scale.
