Nyonya Otah, and why the set at Nyonya next door is worth your full attention.
Otah — or Otak-Otak, depending on where you grew up — is fish paste seasoned with coconut milk and spice, wrapped in banana leaf and grilled over charcoal or steam. The leaf chars slightly and perfumes everything inside. The paste, when done right, is somewhere between custardy and firm, fragrant with turmeric and lemongrass, with enough chilli to remind you it has an opinion.
Nyonya otah is a specific version of this. It tends to be denser, more aromatic, more spiced than the thin grilled slabs you get at some hawker stalls. It's a dish with technique behind it.
The Otah set at Nyonya next door builds a full plate around it. The base is vermicelli — rice noodles that stay light and don't compete. The Otah sits at the centre, golden and substantial. Around it: crispy tofu that gives when you bite, a lava egg with yolk barely set, a prawn fritter for crunch, Ikan Bilis scattered for that deep savoury note, Nyonya achar to cut through richness with vinegar and spice, Sambal to bring everything forward.
It's a thoughtful plate. Every component is doing something specific. Nothing is there just to fill space. If you've only ever had Otah as a snack or a side, this set gives it the room to be the main thing. It earns that room.
