put a large piece of cooking parchment on a baking pan
lay out bacon a single layer only on the pan
cover bacon with another layer of paper
bake at 400°F/200°C for 20 minutes
remove top paper, turn bacon over, put paper back on
cook another 10+ minutes until you like the results - bacon will continue to cook some when you take it out of the oven until you remove it from the pan
remove bacon and lay on racks or paper towels
pour bacon grease into a container for storage or disposal, do not pour down the drain or you'll regret it
we use the bacon fat in some cooking and also to season our cast iron cookware
these directions are for thick-sliced bacon, standard thin stuff probably reduce to 15+5 minutes
