Paleo Jam
Ugh, it's so easy and so damn good. Get up in this business.
Makes approx. 2 cups jam
INGREDIENTS
At least 2 cups of very, very ripe berries of your choice (as long as they don't have mold, they're fair game)
1-2 tbsp honey
Juice of 1 lemon
METHOD
1. Cut up your disgustingly overripe berries and try not to wonder how on earth they're going to taste good at the end of all this. Just believe.
2. Add your berries and lemon juice to a saucepan and heat up for about five minutes until they are bubbling.
3. Add your honey and continue to simmer the berries until most of the liquid is evaporated. You should be left with a jam-like consistency. Have a taste during this process and see if it needs more honey (not likely, mate).
4. Enjoy on whatever it is you like to eat jam off (unless that's household furniture - what is wrong with you) or add it to those amazing Jam-Drop Cookies you're going to make. Pro-tip: Even though it does taste great drunk straight out of the pan, your dignity will thank you later if you just don't.
