A delicious take on a traditional treat are these Paleo Gingerbread Marshmallows. These are made with healthy ingredients and have a cozy gingerbread flavor that makes them ideal for holiday snacking or adding to your favorite hot beverages.
Ingredients: 1/2 cup honey. 1/4 cup blackstrap molasses. 3 tablespoons gelatin powder. 1/2 cup cold water. 1 teaspoon ground cinnamon. 1/2 teaspoon ground ginger. 1/4 teaspoon ground cloves. 1/4 teaspoon ground nutmeg. 1/4 teaspoon sea salt. 1 teaspoon vanilla extract. 1/4 cup arrowroot powder for dusting.
Instructions: Mix the 1/4 cup of cold water and the gelatin powder in a mixing bowl. Give it five to ten minutes to bloom. Combine the honey, blackstrap molasses, and spices in a saucepan over low heat. Mix thoroughly and heat through, but do not bring to a boil. While continuously mixing, slowly add the honey and molasses mixture to the gelatin mixture. When everything is well combined and the mixture is thick and fluffy, add the vanilla extract and stir. To keep an 8x8-inch square baking pan from sticking, grease it and sprinkle it with arrowroot powder. Using a spatula, level the top of the marshmallow mixture once it has been poured into the prepared pan. Allow it to firm up by letting it sit at room temperature for at least 4 hours or overnight. After setting, use cookie cutters to create creative shapes or slice the marshmallows into squares. To keep them from sticking, lightly dust each marshmallow with extra arrowroot powder.
