Why are cooked tomatoes better? + Quick Recipe
Tomato is undeniably a healthy food. Not only it is rich in vitamins C and A, It also contains a large amount of lycopene, a chemical substance that gives the red colour to vegetable and fruit. Lycopene has the properties of an antioxidant, which prevents heart disease and various cancers. Nevertheless, the tomato still has a little secret. Cooked or processed tomatoes are actually more healthy than fresh tomatoes. Why? Research by Cornell University suggests that cooking the tomato, increases the amount of lycopene, and makes the substance easier for the body to absorb [1].
Next time you plan to include tomatoes in your meal, try this easy recipe.
Baked Parmesan Tomatoes
