The waffles and pancakes in these cups make them the best of both worlds. The outside is crunchy and the inside is fluffy. They make a great breakfast treat.
Ingredients: 1 cup all-purpose flour. 2 tablespoons sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 cup buttermilk. 1/4 cup melted butter. 1 large egg. 1/2 teaspoon vanilla extract. 1/2 cup maple syrup. 1/2 cup fresh berries strawberries, blueberries, etc.. Whipped cream optional.
Instructions: Warm up your waffle iron and grease it a little. Mix the sugar, baking powder, baking soda, and salt in a bowl with a whisk. Put the egg, vanilla extract, melted butter, and buttermilk in a different bowl. Mix them together. Add the wet ingredients to the dry ones and mix them together just until they are mixed. Put a small amount of batter into each waffle iron section until they are about half full. Close the waffle iron and cook the waffles for about three to five minutes, or until they are golden brown and crisp. Take the waffle pancake cups out of the iron carefully and let them cool down a bit. Put some maple syrup in each cup and then add some fresh berries on top. If you want, you can put whipped cream on top. Serve right away and enjoy!
