This festive tart combines the unique flavors of pandan and the vibrant color of pomegranate to create a delightful Christmas dessert. The creamy pandan custard pairs perfectly with the tartness of fresh pomegranate arils, all nestled in a flaky puff pastry crust.
Ingredients: 1 sheet store-bought puff pastry. 1 cup pandan custard store-bought or homemade. 1/2 cup fresh pomegranate arils. 1 tablespoon powdered sugar, for dusting.
Instructions: Preheat the oven to 375F 190C. Thaw the puff pastry according to package instructions if frozen. Roll out the puff pastry on a lightly floured surface to fit into a tart pan. Transfer the rolled-out pastry into the tart pan, pressing gently to fit the bottom and sides. Prick the bottom of the pastry with a fork to prevent puffing up during baking. Spread the pandan custard evenly over the pastry base. Sprinkle the fresh pomegranate arils over the custard layer. Bake in the preheated oven for 20-25 minutes or until the pastry is golden brown and cooked through. Remove from the oven and let it cool slightly. Dust with powdered sugar before serving. Slice and enjoy!
