Paneer Indian Cottage Cheese Pancakes are a tasty and savory take on regular pancakes. These pancakes are great for a hearty breakfast or snack because they are made with crumbled paneer and a mix of spices.
Ingredients: 200g paneer Indian cottage cheese, crumbled. 1 cup all-purpose flour. 1/2 cup milk. 1/4 cup water. 2 tablespoons yogurt. 1/2 teaspoon baking powder. 1/4 teaspoon turmeric powder. 1/4 teaspoon cumin powder. 1/4 teaspoon red chili powder. Salt to taste. Oil for cooking.
Instructions: In a mixing bowl, combine the crumbled paneer, all-purpose flour, baking powder, turmeric powder, cumin powder, red chili powder, and salt. Add yogurt and mix well. Slowly add milk and water while stirring to make a smooth batter. Let it rest for 15 minutes. Heat a non-stick pan or griddle and lightly grease it with oil. Pour a ladleful of the batter onto the hot pan and spread it in a circular motion to form a thin pancake. Cook on medium heat until the edges start to lift and the bottom is golden brown. Flip and cook the other side until it's golden brown as well. Repeat the process for the remaining batter, adding a little oil to the pan before each pancake. Serve hot with your favorite chutney or dip.
