A creamy and comforting broccoli cheddar soup inspired by the Panera favorite, perfect for cozy nights in.
Ingredients: 4 cups broccoli florets. 1 cup shredded carrots. 1/2 cup diced onion. 2 cups chicken broth. 2 cups half-and-half. 1/4 cup all-purpose flour. 1/4 cup unsalted butter. 2 cups shredded sharp cheddar cheese. Salt and pepper to taste.
Instructions: In a large pot, melt butter over medium heat. Add diced onion and cook until softened. Stir in flour to make a roux, cook for 1-2 minutes. Gradually whisk in chicken broth and half-and-half. Add broccoli florets and shredded carrots, simmer until vegetables are tender, about 20 minutes. Using an immersion blender, blend soup until desired consistency is reached. Stir in shredded cheddar cheese until melted. Season with salt and pepper to taste. Serve hot and enjoy!
