This panini is a tasty take on the classic Chicken Parmesan. It has toasted ciabatta bread, marinara sauce, crispy chicken, and melty mozzarella cheese.
Ingredients: 2 boneless, skinless chicken breasts. 1 cup breadcrumbs. 1/2 cup grated Parmesan cheese. 1 cup marinara sauce. 4 slices mozzarella cheese. 4 ciabatta rolls. 2 tablespoons olive oil. 1 teaspoon dried oregano. Salt and pepper to taste. Fresh basil leaves for garnish.
Instructions: Warm up your grill pan or panini press. Add salt, pepper, and dried oregano to the chicken breasts. Put breadcrumbs and grated Parmesan cheese in a shallow dish. Coat each chicken breast evenly with the breadcrumb mixture by dipping it in it. In a pan over medium-high heat, heat the olive oil. Add the chicken breasts and cook them for about 4 to 5 minutes on each side, until they are golden brown and fully cooked. Split the ciabatta rolls in half and toast them briefly on a panini press or grill pan while the chicken is cooking. Take the chicken out of the pan and set it aside once it's done. On the bottom half of each ciabatta roll, spread marinara sauce. On top of the sauce on each roll, put a cooked chicken breast. Put a slice of mozzarella cheese on top of every chicken breast. On each sandwich, put the top half of the ciabatta roll. Put a little olive oil on the outside of each sandwich. This will take about 3 to 4 minutes of cooking on a grill pan or panini press until the bread is golden and the cheese melts. Add some fresh basil leaves as a garnish. You can enjoy your Chicken Parmesan Panini while it's still hot.

This Turkey, Apple, and Brie Panini is a great fall-themed sandwich because it has the savory flavors of turkey and Brie with the sweet flavors of apples and honey.
Ingredients: 4 slices of multigrain bread. 4 ounces sliced turkey breast. 1 small apple, thinly sliced. 4 ounces Brie cheese, sliced. 2 tablespoons Dijon mustard. 2 tablespoons honey. 2 tablespoons butter, softened.
Instructions: Set a grill pan or pan for making sandwiches on medium heat. Make two pieces of bread and spread Dijon mustard on them. On top of the mustard-covered bread slices, arrange slices of turkey, apple, and Brie cheese. Spread honey on top of the filling. Add the last few slices of bread on top. Put softened butter on the outside of each sandwich. Put the sandwiches on the grill pan or panini press that has been heated up. Let it cook for three to four minutes, or until the cheese melts and the bread turns golden brown. Take it off the heat and let it cool down a bit before you serve.
