These snickerdoodles are vegan and soft and chewy. They taste great with cinnamon sugar. Great for a sweet treat that everyone can enjoy, even those who don't eat vegan.
Ingredients: 1 1/2 cups all-purpose flour. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup vegan butter, softened. 3/4 cup granulated sugar. 1/4 cup unsweetened applesauce. 1 teaspoon vanilla extract. 2 tablespoons non-dairy milk. 2 tablespoons granulated sugar for rolling. 1 teaspoon ground cinnamon for rolling.
Instructions: Set the oven to 350F 175C and heat it up. Put parchment paper on the bottom of a baking sheet. Mix the flour, baking powder, baking soda, and salt in a medium-sized bowl with a whisk. Put vegan butter and sugar in a large bowl and mix them together until they are light and fluffy. Mix the applesauce and vanilla extract into the butter and sugar until everything is well mixed together. Mix the dry ingredients into the wet ingredients one at a time until a dough forms. Add 2 tablespoons of sugar and 1 teaspoon of ground cinnamon to a small bowl. Mix them together to make a rolling dough. Roll the dough into 1-inch balls, and then coat each one with the cinnamon-sugar mix. Spread the dough balls out on the baking sheet that has been prepared, leaving about 2 inches between each one. Press down on each dough ball a little with the palm of your hand or the bottom of a glass. After the oven is hot, bake the cookies for 10 to 12 minutes, or until the edges are set and they are just barely golden. Take it out of the oven and let it cool for 5 minutes on the baking sheet. Then, move it to a wire rack to finish cooling.
