Ingredients: 4 rockfish fillets. 1 cup panko breadcrumbs. 1/2 cup grated Parmesan cheese. 1 teaspoon dried oregano. 1 teaspoon paprika. Salt and pepper to taste. 2 eggs, beaten. 1/4 cup all-purpose flour. 2 tablespoons olive oil. Lemon wedges for serving.
Instructions: Preheat the oven to 425F 220C. In a shallow dish, mix together panko breadcrumbs, Parmesan cheese, oregano, paprika, salt, and pepper. Place flour in another shallow dish. Dip each rockfish fillet into the flour, then into the beaten eggs, and finally into the breadcrumb mixture, pressing gently to adhere. Place the coated fillets on a baking sheet lined with parchment paper. Drizzle olive oil over the fillets. Bake in the preheated oven for 12-15 minutes, or until the fillets are golden brown and cooked through. Serve hot with lemon wedges.
