Indulge in the perfect blend of creamy pannacotta, sweet strawberry compote, and crunchy granola in this heavenly Strawberry Pannacotta Parfait. A delightful treat that's both visually appealing and irresistibly delicious. Ingredients: 2 cups fresh strawberries, hulled and diced. 1/2 cup sugar. 1 tablespoon lemon juice. 1 teaspoon vanilla extract. 2 cups heavy cream. 1/2 cup whole milk. 1/2 cup sugar. 2 teaspoons gelatin powder. 1/4 cup cold water. 1 cup granola. Fresh mint leaves for garnish. Instructions: Dice the strawberries and put them in a saucepan with sugar, lemon juice, and vanilla extract. Over medium heat, cook until the strawberries break down and the mixture gets thicker. Take it off the heat and let it cool down. Add heavy cream, whole milk, and sugar to another saucepan. Heat it until it almost boils. Put cold water in a small bowl and sprinkle gelatin on top. Let it bloom for 5 minutes. Mix the bloomed gelatin into the cream mixture and stir it in until it's all dissolved. Take the cream mixture off the heat and let it cool down a bit. Fill up the glasses halfway with the mixture before pouring it in. Put it in the fridge for at least two hours, or until it sets. Put some of the strawberry compote on top of the pannacotta once it's set. Add some granola on top. Cover it again, and then add a dollop of strawberry compote and granola on top to finish.
