A delicious mix of crunchy Parmesan toast, soft asparagus, salty Parma ham, and perfectly cooked eggs. This recipe is for a fancy and tasty breakfast or brunch dish that will wow your guests.
Ingredients: 4 slices of Parmesan toast. 4 spears of fresh asparagus. 4 slices of Parma ham. 4 eggs. Salt and pepper to taste. Chopped fresh parsley for garnish.
Instructions: Start by heating the oven to 350F 175C. Cut off the woody ends of the asparagus spears and boil them for two minutes to make them white. After that, put them in an ice bath to stop cooking and keep their bright green color. One slice of Parma ham should go on top of each piece of Parmesan toast. Put a spear of blanched asparagus on top of each piece of toast with ham on it. Be careful as you crack an egg over each spear of asparagus. Add a little salt and pepper on top. Put the eggs in an oven that has already been heated for 12 to 15 minutes, or until they are done the way you like them. Add chopped fresh parsley as a garnish. Enjoy while hot!
