Ingredients: 8 oz linguine pasta. 1/4 cup olive oil. 3 cloves garlic, minced. 1/2 cup cherry tomatoes, halved. 1/4 cup black olives, sliced. 1/4 cup grated Parmesan cheese. 1/4 cup fresh basil leaves, chopped. Salt and pepper to taste. Pinch of red pepper flakes optional. 1/2 cup Pinot Grigio wine.
Instructions: Follow the directions on the package to cook the linguine until it is al dente. Remove the water and set it aside. Warm up the olive oil in a big pan over medium-low heat. Add the minced garlic and cook for about one minute, until the garlic smells good. Put black olives and cherry tomatoes in the pan. After two to three minutes, the tomatoes should start to get soft. Put in the Pinot Grigio wine and let it cook for two to three minutes so that it gets a little less thick. When you add the cooked linguine to the pan, toss it around so that the sauce covers all of it. Grate some Parmesan cheese and chop up some basil leaves. You can add red pepper flakes, salt, and pepper to taste. Add one to two more minutes of cooking and mix everything together until it's all hot. If you want, you can serve it hot with extra Parmesan cheese and basil leaves on top.
