Ingredients: 1/2 cup unpopped popcorn kernels. 1 cup unsalted peanuts. 1 cup packed brown sugar. 1/2 cup unsalted butter. 1/4 cup light corn syrup. 1/4 teaspoon salt. 1/4 teaspoon baking soda. 1 teaspoon vanilla extract.
Instructions: Set oven temperature to 250F 120C. After popping the popcorn kernels using your favorite method, combine them and the peanuts in a large mixing bowl. Melt the butter in a saucepan over a medium heat. Add the salt, corn syrup, and brown sugar and stir. Bring to a boil while stirring continuously. Boil for four to five minutes without stirring. Take off the heat and whisk in the vanilla extract and baking soda right away. There will be bubbles in the mixture. After adding the caramel mixture to the popcorn and peanuts, stir to ensure that everything is coated evenly. Arrange the peanuts and popcorn coated in caramel evenly on a sizable baking sheet covered in parchment paper. Bake, stirring every 15 minutes, for 45 to 60 minutes in a preheated oven, or until the caramel corn is evenly coated and crisp.
