Pear & Basil & Rosemary tart

The buttery puff pastry and sweet, spiced pears in these Pear Tarts go so well together. They are a classy dessert or a tasty snack any time of the day.
Ingredients: 6 sheets frozen puff pastry, thawed. 3 ripe pears, thinly sliced. 1/4 cup brown sugar. 1/4 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. 1 tablespoon lemon juice. 1/4 cup apricot preserves. 1 tablespoon water.
Instructions: Preheat oven to 375F 190C. On a lightly floured surface, roll out each puff pastry sheet into a 6-inch square. In a bowl, toss pear slices with brown sugar, cinnamon, nutmeg, and lemon juice until well coated. Arrange pear slices on each puff pastry square, leaving a border around the edges. Fold edges of puff pastry over the pears, slightly overlapping. Transfer tarts to a baking sheet lined with parchment paper. Bake for 20-25 minutes or until pastry is golden brown. In a small saucepan, heat apricot preserves and water over medium heat until melted and smooth. Brush warm apricot glaze over the baked tarts. Serve warm or at room temperature. Enjoy!

These elegant tarts combine the sweetness of caramelized onions and pears with the savory richness of Gorgonzola and Gruyere cheeses, all nestled atop a flaky puff pastry crust. Perfect for a sophisticated appetizer or light meal.
Ingredients: 1 sheet frozen puff pastry, thawed. 2 tablespoons olive oil. 2 large onions, thinly sliced. 2 ripe pears, thinly sliced. 1/2 cup crumbled Gorgonzola cheese. 1/2 cup shredded Gruyere cheese. Salt and pepper to taste. Fresh thyme leaves for garnish.
Instructions: Turn on the oven and heat it up to 400F 200C. Put some flour on a surface and roll out the puff pastry until it fits a baking sheet. Put the puff pastry on the baking sheet and use a fork to make holes in it all over. Set a pan on medium heat and add the olive oil. To make the caramel, add the sliced onions and cook, stirring every now and then, for about 20 to 25 minutes. Cover the puff pastry with the caramelized onions. Put the sliced pears on top of the onions that have been caramelized. Put Gorgonzola and Gruyere cheese on top of the pears. Add pepper and salt to taste. Put it in an oven that has already been heated up and bake for 20 to 25 minutes, or until the crust is golden brown and the cheese is melted and bubbly. Before serving, sprinkle with fresh thyme leaves.
