Instructions: Preheat oven to 375F 190C. On a lightly floured surface, roll out each puff pastry sheet into a 6-inch square. In a bowl, toss pear slices with brown sugar, cinnamon, nutmeg, and lemon juice until well coated. Arrange pear slices on each puff pastry square, leaving a border around the edges. Fold edges of puff pastry over the pears, slightly overlapping. Transfer tarts to a baking sheet lined with parchment paper. Bake for 20-25 minutes or until pastry is golden brown. In a small saucepan, heat apricot preserves and water over medium heat until melted and smooth. Brush warm apricot glaze over the baked tarts. Serve warm or at room temperature. Enjoy!
A lovely quinoa salad that is both healthy and refreshing, with sweet pears and tart dried cherries. The walnuts and feta cheese give it a satisfying crunch and a creamy texture. This salad is great as a side dish or light meal because it is dressed in a simple balsamic vinaigrette.
Ingredients: 1 cup quinoa, rinsed and drained. 2 cups water. 1 ripe pear, diced. 1/2 cup dried cherries. 1/4 cup chopped fresh parsley. 1/4 cup chopped walnuts. 1/4 cup crumbled feta cheese. 2 tablespoons olive oil. 1 tablespoon balsamic vinegar. Salt and pepper to taste.
