A delightful and nutritious salad featuring the nutty flavor of quinoa, sweet and juicy pears, crunchy walnuts, and creamy goat cheese. Tossed in a simple balsamic vinaigrette, this salad is a perfect blend of textures and flavors.
Ingredients: 1 cup quinoa. 2 cups water. 2 ripe pears, diced. 1/2 cup walnuts, chopped. 1/2 cup crumbled goat cheese. 1/4 cup fresh parsley, chopped. 1/4 cup extra virgin olive oil. 2 tablespoons balsamic vinegar. Salt and pepper to taste.
Instructions: Rinse the quinoa under cold water. In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until water is absorbed and quinoa is tender. Fluff the quinoa with a fork and let it cool. In a large bowl, combine cooled quinoa, diced pears, chopped walnuts, crumbled goat cheese, and fresh parsley. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper. Drizzle the dressing over the salad and toss to combine. Serve immediately or refrigerate until ready to serve.
