Why, of course I do! Though my work takes up most of my life nowadays, I’ve really been getting into working with clay. I’ve made couple figures here and there.. oh, and some of the new vases at the restaurant were made by me as well! Same with some of the little origami decorations..

I suppose you could say that I like getting crafty with my hands, dearie.

I also have my own koi pond back at home that I tend to.

Surely your workflow would be better with more employees? It seems a bit stressful.. 😥

I assure you, I’m used to this, dearie. This is all a perfect system, employees would change that quite a bit. Don’t you worry your little head about it, okay?

In terms of your dishes, which is the most challenging to make and why?

Kohada Sushi. The dish itself is quite small, but the preparation is quite labor intensive. Gizzard Shad is a very small fish, and so there’s risk of it spoiling quickly while I work.

I need to scale the fish, cut it open, and debone it. Then it needs to be salted for quite a while, rinsed, and marinated in vinegar for another set amount of time. Then it needs to be drained, pat dried, and placed in the refrigerator. I could explain that better, but it’s a headache just thinking about it, really..

Lucky for me, it’s not exactly my restaurant’s most popular dish, love.

Whenever your work shifts are done, what do you do if you’re exhausted?

I have a jacuzzi at home, you see. It’s quite helpful for reliving any aches and clearing up my stress! If I don’t have the energy for that, I’ll often sleep it off, dear.

Why is it so important to you that you work alone? Are you hiding something?

Hiding something? Oh dear. That’s quite the nasty little implication.

I’m not hiding anything, sweetheart. Others would simply break the workflow. I’m more of a solitary individual when it comes to how I manage the restaurant.

The last place I asked said that they had zero dishes that don’t contain fish!

Ah.. Of course, dearie! Though I would be wary about coming.. there’s always the potential for cross-contamination, you know.
