Indulge in the delightful combination of chocolate and mint with these Choco Mint Almond Bars. These raw vegan bars are packed with almonds, dates, and a refreshing hint of peppermint. A drizzle of dairy-free chocolate takes them to the next level!
Ingredients: 1 cup almonds. 1 cup dates, pitted. 1/4 cup cacao powder. 1/4 cup shredded coconut. 1/2 tsp peppermint extract. Pinch of salt. 1/3 cup dairy-free chocolate chips.
Instructions: In a food processor, blend the almonds until finely ground. Add the dates, cacao powder, shredded coconut, peppermint extract, and a pinch of salt. Blend until a sticky dough forms. Line a baking dish with parchment paper and press the dough evenly into the dish. Melt the dairy-free chocolate chips and drizzle over the dough in the baking dish. Place the dish in the freezer for about 30 minutes, or until the bars are firm. Remove from the freezer and cut into bars. Store the bars in an airtight container in the refrigerator.
