Ingredients: 24 Oreo cookies. 8 oz cream cheese, softened. 1/2 tsp peppermint extract. 1/2 cup crushed candy canes or peppermint candies. 12 oz semi-sweet chocolate, melted. 1 tbsp vegetable shortening.
Instructions: In a food processor, crush the Oreo cookies until they form fine crumbs. In a large mixing bowl, combine the crushed Oreo cookies, softened cream cheese, and peppermint extract. Mix until well combined. Form the mixture into small balls, about 1 inch in diameter, and place them on a parchment-lined baking sheet. Freeze the cookie balls for about 30 minutes to firm up. In a microwave-safe bowl, melt the semi-sweet chocolate and vegetable shortening in 30-second intervals, stirring in between, until smooth and melted. Dip each frozen cookie ball into the melted chocolate, coating it evenly. Return the coated cookie balls to the parchment-lined baking sheet. Sprinkle the crushed candy canes or peppermint candies over the top of each cookie ball before the chocolate sets. Place the cookie balls back in the freezer for an additional 15-20 minutes to set the chocolate and peppermint toppings.
