Ingredients: 1 block extra-firm tofu, pressed and sliced. 2 tablespoons soy sauce. 2 tablespoons apple cider vinegar. 1 tablespoon olive oil. 1 tablespoon smoked paprika. 1 teaspoon garlic powder. 1 teaspoon onion powder. 1 teaspoon black pepper. 1 teaspoon ground coriander. 1 teaspoon brown sugar. 8 slices rye bread. 1 cup sauerkraut. 1/2 cup vegan Russian dressing. 1 cup vegan Swiss cheese, shredded. 2 tablespoons vegan butter.
Instructions: Put olive oil, smoked paprika, garlic powder, onion powder, black pepper, coriander, and brown sugar in a bowl. Sprinkle in the soy sauce. Put the tofu slices in the mixture and let them sit for 30 minutes. Warm up the skillet over medium-low heat and add a little vegan butter to it. For 3 to 4 minutes on each side, cook the tofu slices until they turn golden brown. Put tofu slices, sauerkraut, vegan Swiss cheese, and Russian dressing between two slices of rye bread to make a sandwich. Put the sandwiches on a panini press or a skillet and cook them until the bread is golden brown and the cheese melts. Cut it up and serve it hot.
