Ingredients: 1 cup all-purpose flour. 1/2 cup granulated sugar. 1/2 cup unsalted butter, softened. 2 eggs. 1/2 teaspoon baking powder. 1/4 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup mixed diced fruits strawberries, blueberries, and mango. 1/4 cup yogurt. 1 teaspoon vanilla extract.
Instructions: Preheat your oven to 350F 175C and line a cupcake tin with paper liners. In a mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the yogurt. Mix until just combined. Gently fold in the mixed diced fruits into the batter. Fill each cupcake liner 2/3 full with the batter. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Remove the cupcakes from the oven and let them cool in the tin for a few minutes before transferring to a wire rack to cool completely. Once cooled, you can frost or decorate the cupcakes as desired.
