Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup granulated sugar. 1 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 1 cup unsweetened almond milk. 1/4 cup vegetable oil. 1 tsp vanilla extract. 1/4 cup vegan jam any flavor. 1/4 cup powdered sugar for dusting.
Instructions: Preheat the oven to 350F 175C. Line a muffin tin with cupcake liners. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Add the almond milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until just combined. Fill each cupcake liner halfway with batter. Spoon 1 teaspoon of jam onto the center of each cupcake. Cover the jam with more batter until each cupcake liner is 3/4 full. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely. Once cooled, dust the tops of the cupcakes with powdered sugar. Serve and enjoy!
