Even though this Yogurt Bundt Cake is the simplest cake ever, the yogurt and fresh lemon juice make it very moist and flavorful. Anyone can enjoy it with a cup of tea or coffee, no matter the event.
Ingredients: 2 cups all-purpose flour. 1 1/2 cups granulated sugar. 1 cup plain yogurt. 1/2 cup vegetable oil. 3 large eggs. 2 teaspoons vanilla extract. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. Zest of 1 lemon. 1/4 cup fresh lemon juice.
Instructions: Preheat your oven to 350F 175C. Grease and flour a Bundt cake pan. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk together the yogurt, vegetable oil, eggs, vanilla extract, lemon zest, and lemon juice until well combined. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix. Pour the cake batter into the prepared Bundt pan and spread it out evenly. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Remove the cake from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Once the cake has cooled, you can dust it with powdered sugar or drizzle it with a simple lemon glaze if desired. Slice, serve, and enjoy!
