Peruvian chicken with creamy green sauce

Peruvian-Style Chicken with Rice and Beans, Fried Plantain, Avocado, and Aji Verde

The spatchcock Peruvian chicken in question! Flavoured with a spice rub made with lemon juice and zest, garlic, cumin, paprika, oregano, salt and pepper.

Served with refried beans (with lime juice, paprika, cumin and hot sauce) and roasted vegetables (sweet potato, cauliflower, carrots and pepper). Gravy was made with the juices of the chicken, very lemony.

Gonna make fajitas tomorrow out of the leftovers and use the chicken bones (including the spine which I took out) to make chicken stock!
