amber wine from autochthonous grapes of Rkatsiteli variety, which is grown in organic vineyards in Kakheti, in Eastern Georgia.
For fermentation and aging of wine for 6 months, Kvevri clay jugs are used, which have been used in Georgian winemaking from 6000 BC. The lovers from the Pheasant Tears winery are made in Amber style (or "orange" wine).
The production of wines of this style is a return to the methods that were used thousands of years ago. “Orange” wine is mainly white wine that is fermented and sometimes even kept in contact with grape skins, due to which it has a rich color and a pronounced taste.
Vinification and ripening of such wine, as a rule, takes place in vessels of the "ancient style", for example, in clay amphorae of Kvevri. Thanks to a special production method, Amber-style wines have excellent intensity, rich aroma and tangible tannin, which you will not usually find in white wines. The aroma of wine is filled with hints of raw honey, walnuts, nectarine and dried apricots. The taste of wine is dry, quite saturated, with notes of nuts, apricot, apple peel, nectarine, tangible tannin.
