Ingredients: 1 cup all-purpose flour. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup coconut oil, melted. 1/2 cup brown sugar. 1/4 cup granulated sugar. 1 egg. 1 teaspoon vanilla extract. 1/2 cup chocolate chips. 1/4 cup shredded coconut. 1/4 cup dried pineapple, chopped.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a bowl, whisk together the flour, baking soda, and salt. In a separate bowl, mix the melted coconut oil, brown sugar, and granulated sugar until well combined. Beat in the egg and vanilla extract until the mixture is smooth and creamy. Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined. Fold in the chocolate chips, shredded coconut, and dried pineapple. Scoop spoonfuls of cookie dough onto the prepared baking sheet, spacing them a few inches apart. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
