Ingredients: 1 lb smoked sausage, sliced. 8 oz pasta of your choice. 1 can 15 oz white beans, drained and rinsed. 2 cups fresh spinach, chopped. 1/2 cup pine nuts, toasted. 1/2 cup grated Parmesan cheese. 2 cloves garlic, minced. 1/4 cup olive oil. Salt and pepper to taste.
Instructions: Set the temperature of your smoker to 225F 107C. After the sausage has been smoked for 30 minutes or until it takes on a smoky flavor, place the sliced sausage on the smoker grates. Take out and place aside. Pasta should be cooked as directed on the package until it is al dente. After draining, set aside. Finely minced garlic should be sauted in olive oil in a big skillet over medium heat until aromatic. After adding the smoked sausage slices to the skillet, cook them for a further five minutes, or until they are browned. Add the chopped spinach and white beans, stirring and letting it wilt. After adding the cooked pasta to the skillet, thoroughly mix everything. To taste, add salt and pepper for seasoning. Spoon the smoked sausage pasta into bowls and sprinkle with grated Parmesan cheese and toasted pine nuts.
