kitchen disaster of the week
honourable mention goes to my attempt at pizza this week. I've got a fairly good track record with pizza, although there has been a pretty bad disaster before (see below). I normally put one directly on the top oven shelf, and a second on a baking tray at the bottom. I normally follow Jamie Oliver's recipe in his Italy book which includes semolina in the dough, and turn the bottom pizza into garlic bread. this time, the dough was too wet. just marginally, but still. and I knew this when I was working it but for some reason I decided to ignore my gut and hoped it would work itself out as I worked it. so the pizza is in the oven. doesn't look cooked so I give it a bit longer. by the time it is cooked, the garlic bread is going brown so that only the centre is edible, and then when I get it out it turns out that the pizza has stuck pretty much comprehensively to the shelf. due to mozzarella spread, I can't even cut slices between the bars, so I'm reduced to tearing chunks off. plus I broke a fish slice trying to hack bits off. I have no idea how. last time I had a disaster like this was when I tried to freeze the pizza bases. if you do this, the base directly on the shelf will sag between the bars before collapsing on the lower pizza resulting in a cheesy tomatoey doughy mess. and hilarity/hysteria. I may try part baking them first next time. or I might just stick to making them fresh. slightly concerned that I've now permanently sabotaged my pizza skills (in the same way I haven't managed to make a decent hollandaise in years after making it without incident for around 5 years previously) but I'll try not to think about it. or feel at all bitter as I clean the oven...
