Being close is very good. Less tiring to get anywhere.
Recipes are good for knowing how to throw things together, though. Most good cooks start with recipes, learn the patterns, and then make stuff up based on what worked and what didn’t.
My favourite vegetarian thing at the moment is probably risotto. It’s pretty easy, really. Fry anything which needs frying beforehand - probably one or two cloves of garlic and one or two onions. Then put the rice in (probably 50-100 grams for just you) and coat the stuff in it. Then add white wine. Then add stock bit by bit whilst keeping everything moving. The idea is you want to soften the rice, so the secret is stirring in big strokes and making sure nothing stays still for long. You should need about one an a half to two litres of stock overall. Make sure to taste the rice to see whether it’s still a bit hard. Then add some cheese at the end. If you have peppers you want to use, those should go in at the end. That’s the basic risotto recipe. Beyond that... You should mix porcini mushrooms with your stock and then add mushrooms at the beginning if you want a mushroom risotto. Or if you want a golden risotto, mix some saffron in with the last bit of stock.
That’s mostly what I’ve got... Plus roasted vegetables are always good. My favourites are butternut squash and sweet potato.
