Ingredients: 2 medium sweet potatoes, peeled and cubed. 1 can 15 oz black beans, drained and rinsed. 1 tablespoon olive oil. 1 small onion, diced. 2 cloves garlic, minced. 1 teaspoon ground cumin. 1/2 teaspoon smoked paprika. Salt and pepper to taste. 2 tablespoons chopped fresh cilantro optional.
Instructions: For about 10 to 15 minutes, or until soft, boil the sweet potatoes in a pot of water. Remove the water and set it aside. Put olive oil in a pan and heat it over medium-low heat. Put in the minced garlic and diced onion. Saut for three to four minutes, until the onion is soft. Put the black beans and cooked sweet potatoes in the pan. Use a fork or potato masher to mash until you get the texture you want. Salt, pepper, and ground cumin can be used to season the food. Mix things together well. Add two to three more minutes and cook until everything is hot. If you want, you can add chopped fresh cilantro as a garnish. Enjoy while still warm!
