These vegan Lemon Blueberry Belgian Waffles are the best thing to eat for breakfast. They're fluffy and light, and they taste great with fresh blueberries and lemon zest. Plus they don't have gluten, so everyone can eat them!
Ingredients: 1 1/2 cups gluten-free all-purpose flour. 1/2 cup almond flour. 1/4 cup coconut sugar. 1 tablespoon baking powder. 1/2 teaspoon salt. 1 1/2 cups almond milk. 1/4 cup coconut oil, melted. 2 tablespoons lemon juice. 1 tablespoon lemon zest. 1 teaspoon vanilla extract. 1 cup fresh blueberries.
Instructions: Preheat your waffle iron. In a large bowl, whisk together the gluten-free all-purpose flour, almond flour, coconut sugar, baking powder, and salt. In a separate bowl, mix together the almond milk, melted coconut oil, lemon juice, lemon zest, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined.
