You can enjoy the traditional Belgian Liege waffles without any meat. You can eat these waffles for breakfast or dessert because they are rich and sweet. They taste great with a crunch because vegan pearl sugar is added to them.
Ingredients: 1 cup plant-based milk. 1 tablespoon ground flaxseed. 3 tablespoons water. 2 1/4 cups all-purpose flour. 1 tablespoon instant yeast. 1/4 cup vegan butter, melted. 1/4 cup maple syrup. 1 teaspoon vanilla extract. 1/2 teaspoon salt. 1/2 cup vegan pearl sugar.
Instructions: In a small bowl, mix ground flaxseed and water. Let it sit for 5 minutes to form a flax egg. In a large mixing bowl, combine flour and instant yeast. Add plant-based milk, melted vegan butter, maple syrup, vanilla extract, salt, and flax egg to the flour mixture. Stir until well combined. Cover the bowl with a clean kitchen towel and let the dough rise for about 1 hour, or until doubled in size. After the dough has risen, gently fold in vegan pearl sugar. Preheat a waffle iron. Divide the dough into small balls, about 1/4 cup each. Place a dough ball onto the preheated waffle iron and cook according to the manufacturer's instructions, until golden brown and crispy. Repeat with the remaining dough balls. Serve warm and enjoy!
