Breaded chicken and roasted cauliflower. I used panko breadcrumbs and flour for the breading. I flavored it with onion/garlic powder, rosemary, and paprika. Dipped the chicken in an egg wash, breadcrumbs, then pan fried them. I really enjoy breaded chicken, but I am not going to lie, you dirty a lot of dishes! BUT! But you get lots out of a 3 pack of chicken breasts. Cut them in half so they are thin like above and you essentially turned a 3 pack into a 6 pack. Plenty of leftovers. And the leftovers from the head of cauliflower you roasted for 30/35 minutes at 400 degrees will definitely last you another meal. Until next time kids!
