Indulge in the delightful combination of sweet plums and crunchy almonds with this vegan plum and almond tart. A tender almond crust holds a creamy almond custard, topped with fresh plum slices and toasted almonds, creating a harmonious blend of flavors and textures.
Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup almond flour. 1/2 cup vegan butter, chilled and cubed. 1/4 cup powdered sugar. Pinch of salt. 3-4 tablespoons ice water. 1/2 cup almond milk. 1/4 cup maple syrup. 1 teaspoon vanilla extract. 1/2 teaspoon almond extract. 1/4 cup cornstarch. 1/4 cup granulated sugar. 1/4 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. 4-5 ripe plums, sliced. 1/4 cup sliced almonds.
Instructions: Warm the oven up to 190C 375F. All-purpose flour, almond flour, vegan butter, powdered sugar, and salt should be pulsed together in a food processor until the mixture looks like coarse crumbs. Pulse the food processor as you add ice water, one tablespoon at a time, until the dough comes together. Fit the dough into a tart pan and cut off any extra. Fork the bottom and put it in the fridge for 15 minutes. Put parchment paper around the edges of the tart shell and fill it with pie weights or dried beans. Do a 15-minute blind bake. Take out the paper and weights, and bake for another 10 minutes, or until the crust is golden brown. Allow to cool. To make the sauce, mix almond milk, maple syrup, cornstarch, cinnamon, nutmeg, vanilla extract, and almond extract in a saucepan using a whisk. Stir the mixture all the time over medium heat until it gets thick. Put the almond custard into the tart crust after it has cooled. Put sliced plums on top of the custard in a circle shape. Sliced almonds should be put on top of the plums. Put the tart in the oven for 25 to 30 minutes, or until the plums are soft and the almonds are lightly toasted. Wait until it's cool to serve.
