Savory Simple's Blueberry Buttermilk Cookies have the perfect balance of sweetness and tanginess. The buttermilk adds a subtle tang, and the plump blueberries burst with flavor with each bite.
Ingredients: 1 cup all-purpose flour. 1/2 teaspoon baking powder. 1/4 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 1/2 cup granulated sugar. 1/4 cup packed light brown sugar. 1 large egg. 1/2 teaspoon vanilla extract. 1/4 cup buttermilk. 1/2 cup fresh blueberries.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a bowl, whisk together the flour, baking powder, baking soda, and salt. In a separate bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. Gradually mix in the dry ingredients and buttermilk, alternating between the two, until just combined. Gently fold in the fresh blueberries. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are golden. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
