T H E H I D D E N V I L L A G E Ponsonby Central unveils a welcome new addition to their line-up of eateries. The Hidden Village serves modern Southeast Asian street food with emphasis on Pinoy cuisine; Fr Larry Rustia (Good Shepard Church) recommended Uncle to try. Uncle was there in a flash, especially since it’s from a man of the cloth. Uncle sat at the food bar; it afforded him an intimate view of the kitchen and its workings. Chef Kino Rivas is cooking with fire, literally. The Tokwat Baboy was alight as the flames licked the wok, imparting a singed taste to the tofu and pork. They were served with lemongrass, shallots, sesame seeds, red pepper and fried shallot. The satay underwent a less fiery cooking procedure. The grilled chicken skewers are served with a pine noodle salad, peanuts, fried shallots, coriander, spring onion and a remarkably tasty satay sauce that complemented the skewered chicken. Chef Kino has good pedigree. He started in the kitchen of Blue Breeze Inn, and has cooked at Cafe Hanoi and The Engine Room. The dishes are expertly cooked and the presentation top notch. Uncle is happy there’s a new Filipino-inspired street food eatery he can feel comfortable in. Eva Malonzo ensures the service matches the food. Uncle is already planing his next visit. He will have the Chicken Adobo and the Coconut Salad.
