When you finish a weekend with a standing ovation, you know you're doing something right. This is our sorrel and pistachio tabouleh from last night's popup. We forage for the sorrel, fennel and angel onions in the salad. We pick tender leaves of parsley, mint, tarragon and chervil. The purple are German mountain spinach, now a California favorite. We tenderize the pistachios in ice water right before service. And the farmers cheese that's been compressed with date molasses gets a hard sear and is added to the salad warm.
