idk if i’ve ever introduced him on here but here’s my skeleton that i got last halloween, my coworker named him pork bones. here is pride pork bones:

Its a fact. Unless we have gnawed on them, I am unable to toss most bones into the trash without first coaxing every last bit of goodness out of them by making soup or stock with them. In fact that most of the items in our little freezer are bones waiting to be made into stock or stock waiting to be used in soups, risottos or anything else needing a shot of flavour.

Shangai Steamed Dumpling (Xiao Long Bao 小笼包)
Ingredients Meat Gelatine 250g pork skin, cut into 1-inch strips 450g pork neck bones (you want neck bones that still have meat on them!) water 2 slices ginger 1 scallion, cut into 3 pieces 1 tbsp shaoxing wine
Dough 1 cup all-purpose flour 6 tablespoons warm water
Filling 450g ground pork (30% fat) 2 tbsp shaoxing wine 3/4 tsp salt 1/2 tsp sesame oil 3/4 tsp sugar 3 tsp light soy sauce 3 tbsp water pinch of ground white-pepper 1 tbsp minced ginger 1 cup meat gelatine, diced into ½-inch pieces
Instructions In a small pot, add the pork skin and pork bones and cover with enough water. Bring to a rolling boil. Immediately drain and rinse off the bones and the skin to get rid of any impurities.
