Ingredients: 4 boneless pork chops, thin-cut. 1 cup black beans, canned and drained. 1 cup corn kernels, frozen or canned. 1 cup bell peppers, thinly sliced. 1 cup cheddar cheese, shredded. 1 tsp ground cumin. 1 tsp chili powder. 1/2 tsp garlic powder. Salt and pepper to taste. 2 tbsp olive oil. 1 cup salsa. Chopped fresh cilantro for garnish.
Instructions: Preheat the oven to 375F 190C. Season pork chops with cumin, chili powder, garlic powder, salt, and pepper. In a skillet, heat olive oil over medium-high heat. Sear pork chops for 2-3 minutes on each side until golden brown. In a bowl, mix black beans, corn, sliced bell peppers, and shredded cheddar cheese. Place a spoonful of the bean and vegetable mixture on each pork chop. Roll up the pork chops and secure with toothpicks.
