Learn how to make soft and fluffy potato dinner rolls to accompany any meal. 🍞
Ingredients:
1 Small Potato, Peeled & Cut Into Chunks
1 Envelope Active Dry Yeast (1/4oz)
1/2 Cup Warm Water 100°F-110°F (120ml)
1 Egg
2 Tablespoons Vegetable Oil (30ml)
2 Teaspoons Lemon Juice (10ml)
1 Teaspoon Salt (6g)
1/4 Cup Sugar (48g)
3 1/4 Cup All Purpose Flour (455g)
Melted Butter
Directions:
Peel and cut the potato into 1 inch chunks. Place potato in a saucepan with enough water to cover. Bring to a boil and cook until softened. Drain, reserving 1/2 cup of cooking liquid. Cool the potato completely. Mash the potato and pass through a sieve or food mill. Let the cooking liquid cool down to 100°F-110°F.
In a mixing bowl, stir together the yeast, 1 teaspoon of sugar, 1/2 cup warm water, and the reserved cooking liquid. Let stand 5 minutes. Add the egg, vegetable oil, lemon juice, salt, sugar, and potato. Beat until smooth. Beat in half of the flour until well combined. Then fold in the rest of the flour, kneading until a smooth dough forms.
Lightly coat a large bowl with cooking spray. Place dough in bowl, turning it over to grease all sides. Cover and let rise in a warm place for 1-2 hours or until doubled in size.
Punch down dough and place on a lightly floured surface. Divide in half, then divide into 12 balls, each about 2-3 inches wide. Place dough balls into a 10 inch round cake pan greased with butter. Cover and let rise in a warm place until doubled in size. Brush tops with melted butter.
Bake in a preheated oven at 375°F for 30 minutes or until rolls are golden brown. Remove rolls to a wire rack and brush tops with melted butter. Serve warm or cooled completely.
