Potatoes Dogana is a tasty variation on Potatoes Anna. It is made with layers of thinly sliced potatoes that are baked until the outside is golden brown and crispy and the inside is soft. The butter and Parmesan cheese give it a rich flavor.
Ingredients: 6 large potatoes, peeled and thinly sliced. 6 tablespoons butter, melted. 1/2 cup grated Parmesan cheese. Salt and pepper to taste. 1 tablespoon chopped fresh parsley optional.
Instructions: Preheat oven to 375F 190C. Brush a 9-inch 23cm round baking dish with melted butter. Arrange a layer of potato slices in the bottom of the dish, overlapping slightly. Brush with melted butter and sprinkle with Parmesan cheese, salt, and pepper. Repeat layering potatoes, butter, cheese, salt, and pepper until all potatoes are used, finishing with a layer of cheese on top. Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 20-25 minutes, or until the potatoes are golden brown and tender. Garnish with chopped parsley if desired before serving.
